ESTUDIO GASTRONÓMICO ACERCA DE LA COMIDA TÍPICA QUEVEDEÑA CON EL PROPÓSITO DE DAR A CONOCER EL PLATO TÍPICO TRADICIONAL DEL CANTÓN QUEVEDO, AÑO 2016

Resumen
En la actualidad está tomando un importante valor el rescate de las comidas tradicionales,
son muchas las personas que se dedican a conservar el patrimonio cultural, demostrando
que en cada parte que se encuentren existen variedad de platos a ofrecer, con cualidades
y sabores distintos. Cada lugar tiene su sazón y esto es lo que hace que se pueda conocer
en qué región del Ecuador nos encontramos con solo probar un bocado. Cada rincón del
país cuenta con ingredientes diferentes y que son propios de sus tierras, esto es lo que
hace que se sienta un deseo por probar el plato más significativo y que solo se encontrara
en ese lugar.
A lo largo de la investigación se utilizaron varias metodologías que sirvieron de base para
averiguar los gustos culinarios de los quevedeños y se observó gran aceptación por el
bocachico en las encuestas realizadas.
El problema actual no sería el olvido de las raíces e identidad cultural, si no la falta
promoción a nivel cantonal de este plato típico, que daría un impulso al turismo al hacer
conocer el bollo de bocachico a los habitantes de Quevedo y a aquellas personas que
llegan a visitarnos de otros cantones y provincias del Ecuador, es lo que trata de reflejar
esta investigación.
El cantón Quevedo es conocido por ser una ciudad cosmopolita, cuenta con una deliciosa
y variada gastronomía, lo que ha logrado que con el pasar de los años por diversos
factores se pierda lo autóctono; con este proyecto de investigación se propone la
promoción del plato típico para que logre rescatar y se mantenga la tradición, impulsando
el turismo gastronómico para el desarrollo de la ciudad.
