Resumen
El presente proyecto de titulación estudia la producción del caviar a partir de las
gónadas de Atún en la parroquia pesquera de Posorja y su posible oferta exportable. Si bien
es cierto el Ecuador es un país que posee unas condiciones climatológicas favorables, dando
como resultado que tanto su flora como fauna sea rica y diversa. Dentro de la Balanza
Comercial, el pez que tiene una mayor exportación es el Atún (Thunnus thynnus) y no sólo
como materia prima, sino que además como preservado en lata que viene a ser un producto
con valor agregado. Se denomina caviar únicamente a las huevas del Salmón y del Esturión
los cuales son comercializados a un alto precio debido a su exquisitez. En el Ecuador se
desperdician las gónadas de Atún y por tal razón es que se estudia la posibilidad de producir
caviar a partir de las mismas, teniendo en cuenta que es una materia prima que el Ecuador
dispone en altos rubros, pero que no se le da ningún tipo de proceso y por ende no se
comercializa como un producto terminado. El objetivo es dinamizar la producción del caviar
a partir de las gónadas de Atún para poder incrementar la oferta exportable, trayendo consigo
una mejor economía para el país; la metodología implementada fue descriptiva con un
enfoque cualitativo el que permite determinar si es factible la oferta exportable del caviar a
partir de las gónadas de Atún.
The present project of titling studies the production of caviar from the gonads of Tuna in the fishing parish of Posorja and its possible exportable offer. Although it is true that Ecuador is a country that has a favorable weather conditions, resulting in both its flora and fauna is rich and diverse. It is called caviar only Salmon and Sturgeon eggs which are marketed at a high price due to its exquisiteness. In Ecuador, the tuna gonads are wasted and for what reason it is studying the possibility of producing caviar from them, taking into account that it is a raw material that Ecuador has in high categories but that is not it gives no type of process and therefore it is not marketed as a finished product. The objective is to boost the production of caviar from the tuna gonads in order to increase the exportable supply, bringing with a better economy for the country, the methodology implemented was descriptive with a qualitative approach that allows to determine if the exportable supply of caviar from tuna gonads is feasible.
