Conocimientos de la madre sobre la alimentación que incide en la recuperacion del niño con enfermedad celíaca del Hospital Roberto Gilbert Elizalde del área de Gastroenterología

Resumen
Se trata de un estudio cuanticualitativo y descriptivo aplicado a las madres que tienen niños con enfermedad celiaca del Hospital Dr. Roberto Gilbert Elizalde para determinar el conocimiento sobre la alimentación libre de gluten. El universo de estudio fueron 30 madres a las que se le aplicó la encuesta. Obteniendo como resultados que 74% desconocen sobre la alimentación libre de gluten,por otra parte el 87% y 93 % refieren que no existen fabricas ni accesibilidad para conseguir alimentos libres de gluten en nuestro país. La utilización de polvos leudante material específico utilizado para la elaboración de postres es prácticamente desconocida para las madres dando como resultado 97% y un 80% respectivamente. La manipulación y la contaminación cruzada al elaborar alimentos, y al utilizar utensilios en donde se ha tenido contacto con gluten fue otro factor de desconocimiento para las madres encuestadas siendo así que un 83% a 97% respectivamente refieren que no existe contaminación al manipular los alimentos con otros que tienen gluten.. En cuanto a las creencias del tiempo que deben llevar la dieta el 83% desconocen el tiempo que deben consumir la dieta sin gluten sus niños, y un 47%. Con estos resultados puedo concluir que el trabajo investigativo realizado fue comprobado y dejando como recomendación para futuras investigaciones se trabaje más sobre este tema, poco conocido en nuestro medio.

With these results, I cannot conclude that the investigative work was checked and leaving as recommendation for further research work is more about this theme, little known in our midst.
