Potencial cariogénico de los alimentos en las loncheras y su influencia en el índice de caries

Resumen
La lonchera escolar es un aporte nutricional en la alimentación de los estudiantes, por lo
que es de vital importancia que los padres de familia estén bien informados por parte de
profesionales en la salud y docentes de la institución sobre la preparación de una lonchera
con bajo porcentaje cariogénico, de manera que se logre prevenir la aparición de caries.
El objetivo fue determinar el potencial cariogénico de los alimentos en las loncheras y su
influencia en el índice de caries dental de los estudiantes de la Unidad Educativa
Olympus. El estudio de campo estuvo direccionado con un enfoque descriptivo,
explicativo, correlacional y observacional, de corte transversal realizado en una población
de 76 estudiantes de 3 a 8 años de ambos sexos. Los resultados obtenidos demostraron
que el nivel de conocimiento de los padres de familia sobre loncheras cariogénicas es
suficiente (74%), el grupo de alimentos más consumidos durante los tres días son las
bebidas azucaradas (92%), mientras que las masas no azucaradas (80%) y las masas
azucaradas (72%) fueron consumidas con una frecuencia de un día. Los niños más
afectados de caries son aquellos que consumen alimentos con potencial cariogénico
moderado (25%) y alto (17%), el índice de caries de los niños de 3 a 8 años de edad es
de 45%. Se concluye que las loncheras de los niños contienen alimentos potencialmente
cariogénicos, ingeridos diariamente que influyen en la aparición de caries y
consecuentemente en el estado de salud general.
The school lunch box is a nutritional contribution in the feeding of students, so it is of vital importance that the parents are well informed by health professionals and teachers of the institution on the preparation of a lunchbox with a low cariogenic percentage, so that it is able to prevent the appearance of cavities. The objective of this study was to determine the cariogenic potential of food in the lunchboxes and their influence on the dental caries index of the students of the Olympus Educational Unit. The field study was directed with a descriptive, explanatory, correlational and observational, cross-sectional approach made in a population of 76 students from 3 to 8 years of age of both sexes. The results showed that the level of knowledge of parents on cariogenic lunchboxes is sufficient (74%). The groups of most consumed foods during the three days are sweetened beverages (92%), while the non-sweetened masses (80%) and sugary masses (72%) were consumed with a frequency of one day. The most affected children with caries are those who consume foods with moderate (25%) and high (17%) cariogenic potential. The caries index of children aged 3 to 8 years old is 45%. It is concluded that the children´s lunchboxes contain potentially cariogenic foods that influence the appearance of caries and consequently, affects the general state of health.
