Mushroom species (Pleurotus spp.) Are popular as cultivated edible fungi and some of them are commercially produced, because of their nutritional properties and good taste. The objective to determine the cultivation of fungi Pleurotus spp. in different substrates of agricultural and agroindustrial origin, in the laboratory of Rumiology and animal metabolism, Faculty of Livestock Sciences of the State Technical University of Quevedo, experimental farm "La María" in 2016. The quantitative, observational and analytical methodology, where radial growth was studied from 24 to 144 hours. In the obtained results it was observed that the radial growth in the agricultural and agroindustrial residues is linear. In the maize stubble the results of radial growth were greater with 80.42 mm and with biomass weight of 0.19 g per gram of substrate, in the case of agroindustrial residues the highest value was for rice husk with 76, 25 mm and with a biomass 0.17 g per gram of substrate. The highest biological efficiency was reported in corn stover with 67.94% and rice husk with 60.60%. It is concluded that the highest percentage of growth, as in the process of production of the fungus Pleurotus ostreatus using as substrates of agricultural and agroindustrial origin, there was a greater biological efficiency in the stubble of corn and maize roe followed by the rice husk. With this alternative of transformation and production of new sources of human food, at the same time environmental pollution is avoided by the burning of the aforementioned waste. These results allow the farmer to use residues of corn stover and rice husk as a substrate to produce the fungus Pleurotus ostreatus and to have a human food source rich in protein and minerals
