The ancestral knowledge of medicinal plants has been used to cure and alleviate various ailments, among those plants; we have Chenopodium quínoa Willd and Justice second Vahl, this study aims to evaluate the antibacterial activity of Chenopodium quínoa and Justice second Vahl against strains of Escherichia coli ATCC 25922 and Escherichia coli BLEE ATCC 35218. The antibacterial activity was performed using the inhibitory minimum concentration method presenting inhibition in the second well in the 3 alcoholic extracts at a concentration of (75%: 8.41 mg / ml) quínoa in shell, (75%: 11.63 mg / ml) quínoa without skin, (75%: 6.24 mg / ml) insulin leaf, compared with tests carried out with 70% alcohol at the same dilution as the extracts, showed inhibition in the fourth well at a concentration of 25%. Alcoholic extracts of Chenopodium quínoa Willd and Justice second Vahl had high concentrations of total phenols.
