Evaluación del contenido de proteínas, aminoácidos y minerales de la lentinula edodes que se cultiva en Ecuador

Resumen
Lentinula edodes pertenece a la división basidiomycota correspondiente al Reino Fungi conocido en Ecuador como Hongo Shiitake, Es un alimento natural consumido por décadas en muchos países desarrollados. En Japón es parte de la dieta de sus habitantes por miles de años. En los últimos años se ha visto un incremento en el consumo de hongos de diversas especies incluyendo el hongo Shiitake. En los años 80 y 90 la producción mundial de setas se aceleró dramáticamente. En Ecuador el cultivo de Lentinula edodes se desarrolla en la región Interandina, debido a las bajas temperaturas que este hongo comestible requiere para su cultivo y asimismo los habitantes de las zonas aledañas son consumidores del hongo Shiitake. Debido a las condiciones en las que se cultiva en Ecuador se decidió investigar su contenido de proteínas, aminoácidos y minerales y compararlas con otros cultivos que se desarrollan en otras partes del mundo, China, Corea, Italia, India, Finlandia, fueron los países elegidos para dicha comparación, dando como resultado algunas diferencias entre las demás investigaciones, suponiendo que el mayor causante de dichas diferencias es la composición del sustrato en donde crece el hongo shiitake.
Lentinula edodes belongs to the basidiomycota division corresponding to the Fungi Kingdom known in Ecuador as Shiitake Fungus, It is a natural food consumed for decades in many developed countries. In Japan it is part of the diet of its inhabitants for thousands of years. In recent years there has been an increase in the consumption of fungi of various species including the Shiitake fungus. In the 80s and 90s, world mushroom production accelerated dramatically. In Ecuador the cultivation of Lentinula edodes is developed in the Andes region, due to the low temperatures that this edible fungus requires for its cultivation and also the inhabitants of the surrounding areas are consumers of the Shiitake fungus. Due to the conditions under which it is cultivated in Ecuador it was decided to investigate its protein, amino acid and mineral content and compare them with other crops that are developed in other parts of the world, China, Korea, Italy, India, Finland, were the countries chosen for this comparison, resulting in some differences between the other investigations, assuming that the main cause of these differences is the composition of the substrate where the shiitake fungus grows.
