Resumen
Este proyecto tiene como objetivo determinar el OEE (Overall Equipment Effectiveness) de
una máquina empacadora de cárnicos. El enfoque radicó en esta área porque presenta
tiempos de retrasos en la línea de procesos del pollo. Se utilizó la metodología DMAIC que
consiste en definir, medir, analizar, mejorar y controlar. Se realizó una verificación en sitio
para el planteamiento del problema, luego en la etapa de medición se utilizó un plan de
recolección de datos para medir las variables que ayudarán a la determinación del indicador
OEE el cual se obtuvo un porcentaje de 41,3% que representa pérdidas, es por eso que se
analizó las posibles causas con un diagrama de Ishikawa y un Pareto. Se solucionó mediante
la implementación de una platina en la banda trasportadora de bandejas. Los resultados
fueron favorables, el OEE aumentó a 68% y el costo anual disminuyó $5084,26 en el área
de procesos de pollo.
This project aims to determine the OEE (Overall Equipment Effectiveness) of a meat packing machine. The focus was on this area because it presents delay times in the chicken process line. The DMAIC methodology that consists of defining, measuring, analyzing, improving and controlling was used. An on-site verification was carried out for the problem statement, then in the measurement stage a data collection plan was used to measure the variables that will help the determination of the OEE indicator, which obtained a percentage of 41.3% that represents losses, that is why the possible causes were analyzed with an Ishikawa diagram and a Pareto. It was solved by implementing a stage in the tray conveyor belt. The results were favorable, the OEE increased to 68% and the annual cost decreased by $ 5084.26 in the chicken processing area.
