Resumen
Mejorar e incrementar la productividad y la competitividad de la empresa, a través de la identificación de los problemas que causan la pérdida de sacarosa durante su cosecha, transporte, molienda y elaboración del azúcar, para entregar un producto en optima condiciones a los clientes del Ingenio San Carlos .
Para diagnosticar la situación actual de la empresa, con respecto a la Gestión de la Competitividad, ha sido necesario analizar los procesos del producto, desde su cosecha en campo hasta la elaboración del azúcar, mediante cada una de sus actividades, detallando cada uno de los elementos de la cadena de valor y desarrollando el estudio de los factores competitivos. Los problemas detectados han sido: Pérdidas de sacarosa en cosecha y transporte de la caña de azúcar debido a: el corte inadecuado de la caña de azúcar, la recolección inapropiada de la caña de azúcar y el transporte inadecuado de la caña de azúcar; Pérdidas de desgaste y daños de equipos de Planta durante los procesos de clarificación, filtrado y evaporación del jugo de la caña: los procedimientos y falta de equipos adecuados; y, No existen datos Estadísticos Cuantificados en fábrica para pérdidas de sacarosa (fuga, derrame, arrastre, temperatura, PH ácido, tiempo alto retención, lavado de caña), para la detección de estos fue necesario el uso del diagrama de Ishikawa. Las soluciones propuestas para enfrentar los problemas han sido, exigir a los transportistas contratados por la empresa llamados cañeros que transportan la caña de azúcar de campo a fábrica, mejorar condiciones de transporte según las cláusulas que se añaden en contratos que firman año a año, la instalación de sellos mecánicos para controlar las fugas y el montaje de válvulas controladores de presión para evitar desperdicios por fugas, y, la instalación de dos muestreros, ubicados en las salidas de agua provenientes del lavado de caña, para la cuantificación de las pérdidas de sacarosa.
