Elaboración y control de calidad de un suplemento alimenticio en polvo a base de uvilla (physalis peruviana) y guayaba (Psidium guajava)

Resumen
Pensando en suplir las necesidades y expectativas existentes en el mercado y con el objetivo de aportar a la seguridad alimentaria y nutricional, en el presente estudio, se formuló y desarrollo, un suplemento alimenticio en polvo a base de guayaba y uvilla, esto bajo el concepto de apostar por un alimento sano y seguro para el consumo humano. Bajo este criterio, se procede a realizar una clasificación de ingredientes apropiados para que el suplemento formulado aporte favoreciendo al consumidor, con una cantidad apropiada de minerales y aminoácidos esenciales que contienen los ingredientes siendo significativos para la correcta actividad del organismo. La cantidad de consumo estipulada para la formula fue de 30g y su reconstitución se efectúa en 250mL de agua. Por porción de producto el contenido nutritivo estimado fue de 9,3g de proteína, 0 g de carbohidratos totales, 0.g de grasas, 1 g de fibra dietética y de por medio una cantidad importante de minerales y vitaminas que aportan y ayudan a complementar el déficit de nutrientes que no se ingesta diariamente en los alimentos. La fórmula ejecutada se optimizó sensorialmente. Para comprobar con el cumplimento de control de calidad, se efectúo un análisis proximal y se convalido la composición. Y se midieron los parámetros microbiológicos. Adicional se elaboró una etiqueta nutricional del suplemento alimenticio.
Thinking about satisfying the needs and expectations in the market and with the aim of contributing to food and nutritional security, in this study a powdered food supplement based on guava and uvilla was formulated and developed. This under the concept of betting on a healthy and safe food for human consumption. Under this criterion, a classification of suitable ingredients is carried out so that the formulated supplement contributes favoring the consumer, with an adequate amount of minerals and essential amino acids that the ingredients contain, being significant for the correct activity of the organism. The amount of consumption stipulated for the formula was 30g and its reconstitution is carried out in 250mL of water. Per serving of the product, the estimated nutritional content was 9.3g of protein, 0g of total carbohydrates, 0.g of fats, 1g of dietary fiber and a significant amount of minerals and vitamins that provide and help complement the deficit of nutrients that is not ingested daily in food. The formula executed was sensory optimized. To verify compliance with quality control, a proximal analysis was performed, and the composition was validated. And the microbiological parameters were measured. Additionally, a nutritional label for the food supplement was developed.
