Resumen
La planta procesadora de alimentos cárnicos de la empresa
Avícola Fernández S.A, se dedica al Faenamiento de aves (pollo, gallinas,
pavos).El objetivo del presente trabajo es aplicar la implementación de un
sistema de Seguridad y Salud Ocupacional, el cual se aplicaron varios
métodos para identificar los diferentes factores de riesgo que existen en la
Planta procesadora de alimentos Cárnicos como fueron: Diagrama de
Pareto, Diagrama Causa – Efecto y Matriz de Riesgo laboral. El cual se
determinó que la principal área de accidentes dentro de la Planta
procesadora de alimentos cárnicos es el Faenamiento de las aves ya que
se manipula agua caliente el cual existen accidentes de quemaduras,
cortes, caídas al mismo nivel y esfuerzo físico por el movimiento repetitivo
al realizar dicha actividad, el cual el presente proyecto se justifica
realizando en la Planta de la empresa Avícola Fernández S.A, la
implementación de un sistema de Seguridad y Salud Ocupacional el cual
va ayudar a prevenir y controlar los diferentes tipos de riesgos laborales
ya que esto nos va a permitir conseguir un mejoramiento de las
condiciones de trabajo y por ende la competitividad de la empresa.
The meat processing plant food company Poultry Fernandez S.A is dedicated to Slaughtering of poultry (chicken, chickens, and turkeys). The aim of this paper is to apply a system implementing Occupational Safety and Health , which several methods were used to identify the different risk factors that exist in the Meat Processing Plant foods like were: Pareto Diagram Cause - effect and Risk Matrix labor. Which it was determined that the main area of accidents within the meat processing plant food is the Slaughtering of birds because hot water is handled which accidents are burns, cuts , falls on the same level and physical strain from repetitive motion to perform such activity , which this project is justified in making the Poultry company plant Fernandez SA , the implementation of a system for Occupational Safety and Health which will help prevent and control the different types of occupational hazards as this will allow us to achieve an improvement in working conditions and thus the competitiveness of the company.
