Resumen
Teniendo como referencia que, para acceder a la certificaciones con sello de origen,
un producto debe cumplir con un conjunto de parámetros establecidos por el IEPI, tales
como: poseer características únicas, componentes de alto beneficio, procesos productivos
de calidad y vínculo real con un territorio; ha nacido la inquietud por profundizar en los
diferentes ámbitos de la industria quesera de Manabí. Su finalidad es evaluar la medida en
que un signo distintivo y de protección como la “Denominación de Origen” puede
influenciar en el dinamismo de una industria. Para conocer los resultados, se ha optado por
recurrir a la metodología bibliográfica y de campo; utilizando herramientas de gran validez
como la observación directa, la entrevista y la encuesta. Llegándose a detectar que la
mayor parte de la producción de queso en Manabí se desarrolla mediante técnicas
artesanales, con bajos regímenes de control de calidad, nulo desarrollo en presentación y
deficiente proceso de distribución, con alta intermediación entre el canal de producción y
el consumidor final, lo que conlleva a la constante variación de precios. Aunque es
necesario resaltar que existen avances significativos en torno a la implementación de
procesos tecnológicos, pero no han sido suficientes, derivándose esta realidad por la falta
de cultura gremial de los productores. Por tal razón se propone la implementación de un
modelo estratégico basado en la fijación de atributos del producto, definición de canales de
distribución, programas de promoción y publicidad y establecimiento de precios
competitivos; lo cual conllevaría al desarrollo de la industria.
