Resumen
El presente trabajo se fundamenta en el análisis del rol del Administrador
Educativo frente a la salud nutricional y su incidencia en el desempeño
académico de las y los estudiantes de la Escuela Fiscal Mixta
“Andrade Coello” del Cantón Quito de la Provincia de Pichincha, en el año
lectivo 2016 – 2017, aplicando como parte de la metodología la
investigación de campo para establecer una propuesta relacionada con el
diseño de un manual de salud nutricional para los estudiantes la institución
educativa, partiendo de la plan de Clase y posteriormente con los talleres
que contiene este manual. Esta alternativa de solución comienza de la
observación directa sobre los malos hábitos alimenticios en el desempeño
de los estudiantes, ocasionados por falta de conocimiento de los alimentos
nutritivos y el adecuado consumo en función del valor nutricional que
aportan a los estudiantes. De tal forma que se aplicó encuestas tanto a
estudiantes como docentes, incluyendo una entrevista a las autoridades,
para la comprobación de la hipótesis se aplicó el Chi-cuadrado, en el cual
en la encuesta de estudiantes se mostró la aceptación de la hipótesis
alternativa (H2) mientras que en los docentes se evidenció la aceptación
de la hipótesis nula (Ho), denotando que los problemas de mala nutrición
infantil, el refrigerio de los estudiantes no es adecuado, los hábitos de
alimentación son desordenados y saturados de calorías y azúcar, estos
inconvenientes deben ser solucionados por el Administrador educativo con
el apoyo de las autoridades. Es así que para la solución de estos problemas
se planteó una propuesta que inicia con planes de clase y talleres
respectivos.
The present work is based on the analysis of the role of the Educational Administrator in the face of nutritional health and its impact on the academic performance of the students of the Mixed Fiscal School "Andrade Coello" of the Quito Canton, Province of Pichincha, in the school year 2016 - 2017, applying as part of the methodology the field research to establish a proposal related to the design of a nutritional health manual for the students the educational institution, starting from the Class plan and later with the workshops that it contains this manual. This alternative solution begins with the direct observation of bad eating habits in the performance of students, caused by lack of knowledge of nutritious foods and adequate consumption based on the nutritional value they bring to students. In such a way that surveys were applied to both students and teachers, including an interview with the authorities, for the verification of the hypothesis, the Chi-square was applied, in which the acceptance of the alternative hypothesis was shown in the student survey ( H2) while in the teachers the acceptance of the null hypothesis (Ho) was evidenced, denoting that the problems of child malnutrition, the refreshment of the students is not adequate, the eating habits are disordered and saturated with calories and sugar, These problems must be solved by the Educational Administrator with the support of the authorities. Thus, for the solution of these problems, a proposal was proposed that starts with class plans and respective workshops.
