Resumen
El diseño de la industrialización de derivados alimenticios del coco de forma
artesanal de los productores de la provincia de Esmeraldas se da debido a que la
informalidad de la actividad ha generado que la economía popular poco a poco vaya
disminuyendo por lo que se realizó una investigación de alcance exploratoria,
descriptiva y de cambo, teniendo como instrumento el cuestionario para la técnica de
encuesta que fue dirigida a los productores artesanales de la fruta del coco de la
provincia de Esmeraldas, donde los resultados obtenidos fueron completamente
positivos para el modelo de industrialización de derivados alimenticios del coco tales
como cocada de color blanco y café, además de barras de coco, los mismos que serán
de varias presentaciones para captar el mercado, donde también se muestra la
valoración financiera del modelo de negocio de economía popular y solidaria para
los productores de la provincia de Esmeraldas.
