Uso de identificadores estándar que contribuyan a la soberanía Alimentaria en Productos Frescos

Resumen
Desde el 2009 con la publicación de las normas de Buenas Prácticas de Producción en
lineamiento con la Ley de Soberanía Alimentaria, el plan nacional del buen vivir y la
Constitución de la República del Ecuador se pide a los productores de alimentos cumplir con
métodos de trazabilidad y el uso de códigos de barras, no obstante, no se especifica cuáles
códigos de barras utilizar en sus procesos. Al no contar con una producción de alimentos
trazables en todos los puntos de la cadena de distribución significa un riesgo latente que
impide alcanzar la soberanía alimentaria. Por ello el objetivo del presente trabajo es sugerir
como norma el uso de identificadores estándares basados en códigos de barras estándares que
sirva para la trazabilidad de los productos. La metodología aplicada fue cuali-cuantitativa con
encuestas realizadas a los productores afiliados al sistema GS1, incluyendo también una
entrevista a experto en codificación. Los resultados obtenidos demuestran que existe un
desconocimiento de los potenciales beneficios que implica usar códigos de barras GS1 y se lo
relaciona únicamente a la aplicación en supermercados. Sin embargo, el uso actualmente
aplicado llevó a los mismos productores consultados, a recomendar el sistema GS1. Se llegó
a la conclusión que es posible la trazabilidad de los productos si se promulga la
implementación correcta de los estándares.
Since 2009 with the publication of Good Production Rules Practices in guideline with Food Safety Law, The National Plan of Good Living and the Constitution of the Republic of Ecuador, food producers are required to have traceability methods and the use of bar codes, however there is not properly specified which barcodes have to be used in their production. Lacking of traceable food production at all points in the supply chain, means a latent risk which prevents achieving food sovereignty; hence the objective of the present research, suggest as a law the use of standard identifiers based on standard barcodes that serves for the traceability of products. The methodology applied in this research was qualitative and quantitative, collecting survey information from producers affiliated to the GS1, also including an interview with some experts in bar coding. The results show that exists a lack of knowledge of the use that can be given to the standard GS1, however the current use that food producers have about the standards, let them to recommend GS1. It was concluded that the traceability of products is possible if enacted the correct implementation of the standards.
