Estudio de la oferta, demanda y comercialización de la yuca Manihot esculenta krantz en el cantón Valencia provincia de Los Ríos

Resumen
El presente trabajo de investigación presenta un Estudio de la Oferta,
Demanda y Comercialización de la Yuca (Manihot esculenta Krantz) en
el cantón Valencia – provincia de los Ríos con los objetivos específicos
de: Evaluar la oferta y demanda de este producto, sus derivados e
identificar la estructura y funcionamiento de la cadena de
comercialización, desde la finca hasta el consumidor final y así
determinar las perspectivas del mercado. Se utilizó encuestas
descriptivas respondidas por los agricultores del recinto Pise del Tarro,
en un muestreo no probabilístico casual y juicio de expertos. Los datos
obtenidos se procesaron e interpretaron con el cálculo de números índice
y pasteles. En este cantón no se procesa yuca para obtener sus
derivados y existe un histórico déficit de su producción en fresco, que
alcanza buenos precios, pero el agricultor es el que lleva menores
ganancias, porque la mayor cantidad de ingresos es concentrada por el
intermediario acaparador, mismo que hasta realiza la cosecha para
venderla toda en los mercados populares de las ciudades más cercanas,
rompiendo así la equidad de la cadena de comercialización, que
desmotiva al productor en mejorar su cultivo y expandir el área de
siembra. A partir del año 2015 el consumo doméstico de yuca fresca en
el cantón Valencia, ha venido incrementándose en un 2,6% anual, lo cual
coincide con el crecimiento de la población, por lo que se auguran
buenas perspectivas para el aumento de la superficie sembrada.
The following research work presents a Market Study of the Cassava (Manihot esculenta Krantz) in Valencia in Los Rios Province, with specific objectives: to assess the supply and demand of this product, its derived products and identify the structure of the marketing chain, from the farms up to the consumer, and thus to identify the perspectives of the cassava. Descriptive surveys were used, which were answered by the farmers of “Pisces del tarro”, in a random, non-probability sampling and expert judgment. The obtained data was processed and interpreted with the calculation of index numbers (percentage) and pie charts. In this village, the cassava is not grown to obtain its derived products and there is an historical deficit on the production, reaching good prices, but the farmers take very low profits, because of the intermediaries who take most of the profit and even carries out the harvest to sell it all in the popular markets of the cities nearby. This breaks the equity of the marketing chain, discourages the farmer on improving his corps and expanding the sowing area. Since 2015, the local demand of cassava in Valencia has started increasing at a 2.6% yearly rate, which coincides with the population increase. As a result, good prospects are on the horizon for an increase in the area sown.
