Resumen
El presente trabajo de investigación “Evaluación morfológica y organoléptica del
fruto de aguacate (Persea americana) CV 'HASS' en determinadas condiciones
edafoclimática”, se realizó en la Estación Experimental Litoral Sur del INIAP tuvo
como objetivo Determinar las características morfológicas órgano-sensoriales
del fruto de aguacate Cv 'HASS' producido en las condiciones edafo-climaticas
de "El Azúcar", Santa Elena. Se evaluó durante 15 días a partir de la cosecha
parámetros relacionados con la pérdida de calidad del fruto como: peso, longitud,
diámetro y firmeza encontrándose en peso 13,93% de perdida; en longitud un
7,22%; en diámetro 5,27% y en firmeza 52,25%. En características
organolépticas la materia seca decrece con valores iniciales de 31.58 y finales
25.10%, en sólidos solubles totales 15,14%; los valores de acidez titulable van
de 0.46 en el día cero hasta llegar a 0.31% en el día 15. Se concluye que las
condiciones edafoclimaticas de la Península de Santa Elena no inciden en las
características morfológicas y organolépticas de fruto de aguacate.
The present research work "Morphological and organoleptic evaluation of the avocado fruit (Persea americana) CV 'HASS' in certain edaphoclimatic conditions", The specific objective of which was to determine the effect of the edafo-climatic conditions of the "El Azúcar" area on the morphological characteristics of the fruit and to measure the effect of the edapho-climatic conditions of the "El Azúcar" zone on the organo-sensory characteristics of the fruit. To achieve this, several fruit quality standards were evaluated for 15 days from the harvest such as weight loss in which 13.93% was obtained, loss of fruit length with 7.22%, loss of diameter of 5.27%, in firmness the highest value appreciated was 52.25%, dry matter decreases to 31.58, 29.84, 29.27,27.87, 26.83, 25.10%s, total soluble solids 15.14%; the securitizable acidity values range from 0.46 on day 0 and decrease until reaching 0.31% on day 15., changes in the fruit caused by the effect of biotic factors.
