Resumen
El presente trabajo tiene como objetivo determinar el contenido de polifenoles totales y actividad antioxidante de la cáscara de Passiflora tarminiana (taxo) optimizando las condiciones de procesamiento por medio del extracto hidroalcohólico. El Taxo Passiflora tarminiana, su origen es en la zona andina de América del sur, que comprende Perú, Ecuador y Colombia. El Taxo es una fruta de excelentes características tanto física y sensorial para el consumo humano, siendo un frutal de origen andino, por lo cual tiene ventajas cualitativas y cuantitativas. Es un excelente diurético y contiene mucha fibra, además de minerales como el calcio, hierro y fósforo. Se determinó el contenido de polifenoles totales mediante el método Folin-Ciocalteu y la actividad antioxidante mediante un método basado en la estabilidad del radical 1,1-difenil-2- picrilhidrazil que también es conocido como ensayo de DPPH. Los resultados obtenidos de polifenoles totales fueron de 0.42 % en extracto hidroalcohólico, y la capacidad antioxidante los valores obtenidos fueron de 65,83 IC50 (Ac Gálico) mg/mL y 18,54 IC50 (Ac Ascórbico) mg/mL.
The objective of this work is to determine the total polyphenol content and antioxidant activity of Passiflora tarminiana (taxo) peel by optimizing the processing conditions by means of hydroalcoholic extract. Taxo Passiflora tarminiana originates from the Andean zone of South America, which includes Peru, Ecuador and Colombia. Taxo is a fruit of excellent physical and sensory characteristics for human consumption, being a fruit of Andean origin, which has qualitative and quantitative advantages. It is an excellent diuretic and contains a lot of fiber, as well as minerals such as calcium, iron and phosphorus. The total polyphenol content was determined by the Folin-Ciocalteu method and the antioxidant activity by a method based on the stability of the 1,1-diphenyl-2- picrylhydrazyl radical, also known as the DPPH assay. The results obtained for total polyphenols was 0.42 % in hydroalcoholic extract, and the antioxidant capacity values obtained were 65.83 IC50 (Gallic acid) mg/mL and 18.54 IC50 (Ascorbic acid) mg/mL
